JJs Superfood Stew

JJ would be Jeremy, who let me know yesterday that his cousins nicknamed him JJ when he was a kid. I’m not sure why, as his initials are actually JCC. Kids.

Onto the purpose of the post, this deliciousness:

Ingredients:
– 1 box organic chicken stock
– 1 box organic beef stock
– 1 sweet potato, cubed
– 1 cup mushrooms, quartered
– 1/2 cup carrots, chopped
– 1 bunch kale, rib removed and leaves roughly chopped
– 2 cups onions, chopped
– 5 celery stalks, chopped
– 2 cups white beans (rinsed and soaked for about 4 hours)
– 1 cup red lentils, per soaked
– 1 cup red quinoa (we had some leftover)
– 1 beef Polska kielbasa, sliced
– salt & pepper
– 2 large cloves garlic, minced
– 12 or so sage leaves
– small handful fresh thyme
– 1 TBSP sriacha sauce

DIRECTIONS:
1- Sautéed onions, celery, and garlic in olive oil till onions sweat
2- Add kielbasa until it begins to brown
3- Add beans and lentils, sautéed for three minutes
4- Add herbs, salt & pepper, veggies (except kale & mushrooms)
5- Stir
6- Add broths, cook on medium high for 40 minutes
7- Add kale & shrooms, lower heat to medium
8- Cook for an additional 20 to 39 minutes, stirring occasionally
9- Serve with a hearty bread ( we toasted whole grain bread drizzle with truffle oil and balsamic)

We just so happened to have all these ingredients, and, since we are leaving for vacation in a couple days, needed to use up the veggies. It wasn’t until we were cooking that it was a superfood powerhouse dish. I just feel healthier and as if I’m detoxifying my body as I’m eating another helping right now.
